Easy, tasty, cheap meals. One week sampler.

Are you stuck for meal ideas?  Eating the same thing week in week out? Here is a week’s worth of ideas for you!  If you have missed any of the posts in my series on meal planning, you can read them all starting from this one.

Now, your experience in the kitchen may not mirror the image above, but by planning, it could get better!

I own a thermomix, which is an amazing machine. It can chop, blend, knead dough, cook, steam and more! Most of the following recipes that I love use a thermomix. Don’t be disheartened, you can make these meals by hand too, it just takes a bit more time.

1. Skinnymixers Macaroni Cheese with a Twist.

I love this meal for a cold day.  It’s very warming.  Another positive is that it has loads of hidden veggies so the kids won’t even know that it’s healthy!  A few changes that I made is that I substitute out the ham for 300g of bacon bits which I cook in a frying pan first before adding it to the dish.  It is delicious.

2. Honey sesame chicken.

A very good friend of mine introduced me to this dish.  It took me a few go’s to get the temperature of the oil right, but once I did it was easy.  I served it with a stir-fry.  You could also add rice.

3. Varoma Meatballs

I made this for friends a few months ago, and they loved it!  It’s another great meal that allows leftovers for lunches the next day or another full dinner.  As we needed to be quite careful with egg, I used to leave it out altogether, they still hold together nicely.  You may need to adjust the amount of breadcrumbs to suit.  It’s another good one for hidden veggies!

4. Roasted Vegetable Panini’s

My favourite vegetarian meal!  I substitute out the cheese in the recipe for feta cheese.  My children love it, and so do we.  The sweetness of the sweet potato with the crunchiness of the cauliflower and the saltiness of the cheese is a winning combination.  If you try any of these recipes, this is the one I’d recommend.  Oh, and I increase the amount of time to ensure that the vegetables are fully cooked.

5. Kale Soup (Green Power Soup)

Kale is a super food.  And with winter in full swing, with all of the illness it brings with it, this is a winner.  Now, it may look VERY GREEN to you, but never fear, we add a little more cream and a little more cheese to it and it tastes amazing.

6. Devilled Sausages

My favourite Devilled Sausages recipe – unfortunately not enough for two nights for a family of four, but sometimes leftovers for lunch the next day.  It also needs additional vegetables.

7. Moroccan pork with apple

This is a quick, easy, and inexpensive meal that requires very little preparation.

8. Naan bread

The perfect accompaniment to most meals.  I divide it into 10, and roll it thinly before cooking it on medium to high heat in a lightly oiled frying pan.  You won’t go back to buying store bought naan after you’ve made this.

  1. This is my one big stumbling block: I don’t enjoy planning 😢 You are absolutely right though! As soon as we are back at home I’m going to give it another go. Thanks for the inspiration!

    1. I’ve found that the work I’ve put in is very rewarding. All my shopping lists are pre-printed and all I have to do is tear off the week I’m in, cross off what I don’t need and head to the shops. I will say that there’s a lot of work that goes in to begin with.
